The difference between a torta and a cemita at the Tia Julia truck
At left, the cemita, with quesillo cheese, papalo herb, chipotle salsa, hugged in a round sesame seed bun. It’s the deluxe version of the torta (Mexican sandwich) from Puebla. Given the choice, and the extra dollar, always get the cemita.
